Traditional Method Sparkling Wine.

 

The distinctive features of Jordán de Asso sparkling wine are its delicate, insistent mousse, light straw color, complex yet fruity aroma and its balanced acidity. This brut nature has been created from  macabeo grapes by Javier Guelbenzu, an oenologist trained in reims (champagne). In this wine Javier Guelbenzu has applied all the knowledge acquired in his oenology degree in Champagne, France.

Grape Varieties: Macabeo and Chardonnay

Harvest: Grapes hand picked from vines in the upper area of the Campo de Cariñena.

First fermentation:
Time: 2 weeks
Temperature: 15 °
No malolactic fermentation.

Second fermentation in bottle: Lees contact time: minimum 24 months

Conservation time: This wine should not be stored for long periods, but rather taken as young as possible.
